Peanut Butter Oatmeal Cookies

The world of cookies is never ending. If you’ve had the perfect chocolate chip cookie, there is yet another waiting around the corner for you, ready to blow your mind. When you’re a kid (let’s be real, and an adult), you may love those fluffy sugar cookies topped with the thick frosting that flakes off like old paint. Or if you’re a serial killer, you may love those extra thin crispy cookies that are similar to eating a wafer. Who wants a wafer unless it’s a wafer? And if you’re an influencer, you probably love those Levain cookies that make you feel like you’re sexually attracted to food. My point is, cookies never get old. Never. So when I came home from the mountain yesterday, PMS symptoms ablazin’, I decided it was time to make some cookies with whatever I had on hand. And I had lots of peanut butter and oats. Boom. These beautiful little babies were born.

In case you were wondering, since I know you weren’t, I was in the mountains over the weekend watching a friend get married. I’ve known this guy for 10 years, he was a bridesman in my own wedding, and since he is like a brother to me, we’ve had some big brother/sister fights. And since both of us our stubborn AF, our last fight lasted years. Rough. Luckily he decided to stop being such a stubborn asshole and gave me a call. That’s when I decided to stop being a stubborn asshole. And you know what came out of it? And even better friendship and the chance to see him get married to his beautiful bride. It was pretty awesome. The only thing that sucked was I had cramps the night of the wedding so I ended up turning it in around 9:30pm since jumping wasn’t causing my insides to like me anymore than they already did. Are you so over me talking about my period in this food post. Fair.

The wedding was absolutely beautiful. It was on a ranch in Steamboat Springs with beautiful horses in the background as they recited their vows. Then the reception was just up the hill, under a tent, with a pizza food truck, and an awesome DJ. But the best part of the night were the speeches. Nothing better than a groom that has hilarious friends who want to roast him. All of his friends were hilarious and had the crowd roaring. But the ABSOLUTE best part was the best man speech. The best man is a stand-up comedian, who is REALLY good at his job. His speech was truly the most fantastic speech I’ve ever heard. He had everyone laughing with his stories, then he turned serious and you could hear a pin drop, then he finished with a completely heartfelt ending. He even had my husband crying. It was so beautiful and I wish I could listen to it over and over again. It was such a fantastic night. So glad my friend decided to not be so damn stubborn and helped me along the way.

The only thing that would have made it better? Probably cookies.

Peanut Butter Oatmeal Cookies

  • Total Time: 25 minutes
  • Yield: 14-16 cookies 1x
  • 1 cup peanut butter (or other nut butter)
  • 1/2 cup sugar (coconut, maple, or organic cane sugar)
  • 1/4 cup butter (ghee or coconut oil), melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup gluten free oats
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • pinch of salt
  1. Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
  2. In a large bowl, mix together peanut butter, sugar, butter, egg, and vanilla extract. Then add oats, baking soda, and salt. Fold until completely combined.
  3. Use a cookie scoop to scoop out 14-16 cookies. I baked my cookies in 2 batches, adding 6-7 cookies per batch since they spread. Place in the oven to bake for 13-15 minutes, until slightly golden on the outside rim of the cookie. Remove from oven and let cool for at least 5 minutes before transferring to a cooling rack. Eat, baby doll, eat!
