I love making granola. Homemade is truly the best! But I’ve never made granola with pumpkin seeds in it. And something I’ve been trying to do lately is eat more pumpkin seeds since they are loaded with zinc and over 80% of women get inadequate amounts of zinc on a daily basis. Inadequate zinc can really mess with your hormones and the last thing I want to do is throw any more fuel on the fire during an already heightened hormonal state, aka pregnancy. Plus zinc helps with so many things during pregnancy like preventing uterine infections and preterm delivery. I think it’s safe to say I’m a fan of zinc, especially for your skin. But you don’t have to be pregnant to reap the benefits of zinc!

Benefits of pumpkin seeds for everyone:

  • Pumpkin seeds are a great source of zinc. Zinc helps support your immune system, helps with inflammation and healing wounds, protein and DNA synthesis, and aids in growth and development. It is essential for the body and often lacking in our daily diets.
  • Pumpkin seeds are a great source of magnesium. Magnesium helps with over 300 functions in the body, including muscle and nerve function, blood pressure, bone formation, and it helps support your immune system.
  • Pumpkin seeds are high in fiber. Not only will this help you feel fuller longer, but it helps you poop better! And everyone likes a good poop!

And I don’t know about you, but I’m never really craving pumpkin seeds. Sure, they are good on salads or in some yogurt, but I never want to eat them by themselves. They are a super thrilling seed. Sorry, pumpkin seeds, but you boring. So I thought I would add them to a crunchy granola and that way I could add them to raw milk in the mornings or a yogurt bowl for a snack in the afternoon or simply eat the granola straight from the jar because it is ADDICTING. Vanilla Tahini Pumpkin Seed Granola

  1. Preheat oven to 325 degrees F. Line a baking sheet with parchment paper.
  2. In a large bowl, mix together maple syrup, tahini, butter, vanilla bean paste, and vanilla extract. Once combined, add oats, pumpkin seeds, and salt then mix until completely coated in the tahini mixture.
  3. Pour onto baking sheet, spread oats into a flat layer and press into the parchment paper. This will make it nice and chunky once cooled. Place in the oven to bake for 15 minutes, turn baking sheet, then bake for another 15 minutes. Once done baking, let cool COMPLETELY on the baking sheet.
  4. Eat by itself or in a bowl of your milk of choice!
